That looks really easy, I was way too anxious to stockpile replacement parts for my car and bought a Volvo master cylinder.
I prefer this option.

Just so everyone's clear: those rebuild instructions are for a clutch master cylinder, not a brake master cylinder. Brake masters have two pistons.
Most clutch master rebuild kits come with the piston assembly already assembled -- just pull out the old one and insert the new assembly:

Brakeware/Fenco rebuild is less common now, so you may want to source Dorman CMK351685 (looks the same).

Rebuilding the slave is even easier. I did mine about 7 years ago. I got the kit from Hervey. But there were a few different slaves used in the DeLorean as far as internal components.
